Toasted Pita with Fennel
2 Pita Breads
about 1 tsp fennel seeds
about 1/3 cup olive oil
Move rack to middle of the oven. Heat broiler on High.
Place fennel seeds and olive oil in a mortar/pestle. Gently mash.
Split the pita breads along the middle using kitchen shears, gently pulling them apart. Brush the rough-side of each pita with the olive oil and fennel. Cut the pita into triangles. Sprinkle with sea salt.
Place on a baking sheet at toast under the broiler for 3-4 minutes, until toasted.
Serve with hummus etc. Serves about 2.
