Parmesan Frico Crisps
1 cup finely grated fresh parmesan
Preheat oven at 350, place rack in the middle of the oven. Line a baking sheet with silpat (or parchment). For each frico crisp, use about 1/4 cup of grated parmesan and spread into a 3" round on the silpat. Repeat for remaining three fricos. Bake for 8-10 minutes. Lift frico crisps with a spatula as soon as you remove from oven and place flat on a plate.
Note: These little crisps are delicious on burgers and salads.
