Eggless Apple Walnut Muffins
1 1/2 cups flour
2 tsp baking powder
1 1/2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
4 tbsp corn starch
4 tbsp water
3/4 cup sugar
2 medium sized apples, peeled and finely chopped
5 tbsp warm melted butter
1/2 cup chopped walnuts, toasted
Preheat oven to 400. Distribute 12 muffin cups into muffin tin.
In a medium bowl, mix flour, baking powder, cinnamon, baking soda and salt together.
In a large bowl, whisk together corn starch and water. Mix in sugar. Add the chopped apples, stir and let stand for 10 minutes. Stir in the butter and walnuts.
Add flour mixture to apple mixture and gently fold ingredients together. Evenly distribute batter into the muffin cups. Bake for about 15 minutes.
