4 cups quaker oats (not quick cooking)
1 cup sliced almonds
1/2 cup packed brown sugar (either golden or dark)
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/3 cup vegetable oil
1/4 cup honey
2 tablespoons sugar
4 teaspoons vanilla
Preheat oven to 300°F and move rack to middle position. Spray large baking sheet with PAM. Mix oats, almonds, brown sugar, salt and cinnamon in large bowl. Combine oil, honey, and sugar in small saucepan and bring to low simmer over medium heat, stirring to incorporate the ingredients. Remove from heat. Stir in vanilla. Pour liquid over oat mixture and stir well with a wooden spoon.
Spread granola on baking sheet. Bake until golden brown about 30 minutes, stirring once midway through baking. Remove from oven, then toss around several times while it is cooling, or it will stick together. Cool granola completely to crisp. This granola can be made 2 weeks ahead and stored in an airtight container like a mason jar at room temperature.
