Buttery Peas with Mint
3 tbsp unsalted butter
1/3 cup yellow onion, finely chopped
2 cups fresh peas
1 tsp sugar
1/4 cup water
2 tbsp fresh mint, chopped
Melt butter in a medium pan over medium heat. Add onion and cook about 6 minutes, until softened but not browned. Add peas, sugar, water and salt and simmer about 10 minutes, or until the peas are tender and the water has mostly evaporated. Remove from heat and stir in the fresh mint. Serve warm.
