Gourmet Grilled Cheese
about 21 slices of gruyere cheese, sliced about 1/4" thick
about 21 slices of Roma tomato, sliced about 1/4" thick (about 2 tomatoes)
6-8 large slices of sourdough bread (the largest middle slices from a loaf)
about 8 tbsp butter (about 1 tbsp per bread slice), room temp
Move rack to the lowest level in the oven and preheat broiler.
Butter one side of each piece of bread with 1 tbsp of butter, making sure to butter the sides of bread that will be facing out and that the matching pieces fit together (and buttered sides face out) when placed together as a sandwich.
Place 3-4 slices of bread, butter side facing down, in one layer on a broiler pan. Lay 5-6 slices of gruyere on each bread slice, then top with about 5-6 tomatoes. Top with remaining bread slices, buttered side facing up.
Place under broiler on middle rack for about 2 minutes, or until beginning to brown evenly. Remove, flip sandwiches and broil another 2 minutes until nicely browned and the cheese has melted. Make sure to pay close attention during the cook time or they may burn! Remove from oven and place on a cutting board. Cut each sandwich into 3 pieces (or 2 depending on how big the bread is). Sprinkle with pepper and serve warm!
