Cold Pasta and Chicken Salad
8 oz fusili (or any pasta you like)
1 cup La Martinique Famous French Dressing (garlic vinaigrette if unavailable)
10 fresh sliced mushrooms
1 cup broccoli florets, blanched
1/2 cup red or yellow bell peppers, chopped and blanched
10 cherry tomatoes (optional)
2 cups cooked, cubed chicken
1/3 cup fresh basil, chopped
1/3 cup pine nuts, toasted
Cook pasta in boiling water, drain and transfer to a mixing bowl. Add 1/3 cup dressing, toss, let cool, and chill for at least 3 hours. Place remaining dressing in another bowl. Add veggies, stir to coat thoroughly and chill. When ready to serve add chicken to pasta and toss. Add vegetables, chopped basil and pine nuts. Toss again and serve.
Serves 4 to 6
*Leave chicken out if you like....perfect for a vegetarian meal. Also, add any veggies you like...omit or add to the above list.
