Couscous with Dates

Note: The ingredient amounts are estimates - add more/less cheese, nuts and dates if you want. You can either top the couscous with the goat cheese when you are ready to plate/serve or just stir it into the mixture really well (this is usually what I do). Dates are a new staple in my household. They are so sweet and tasty! The ground cinnamon is a great addition to this flavor!
Ingredients
1 medium white onion, chopped coarsely
A splash of balsamic vinegar
1 tbsp olive oil
Salt/pepper to taste
1 cup couscous
1 cup water
2 tbsp butter
1/2 tsp salt
about 1/2 cup chopped dates (or more, if desired)
about 3 tbsp pine nuts (or more, if desired)
about 1/4 cup goat cheese, crumbled (OPTIONAL)
a pinch of ground cinnamon
3 tbsp garlic oil (or you can use olive oil)
Directions
Heat 1 tbsp of olive oil in a medium skillet over low-medium heat. Add onions, balsamic vinegar and season with salt and pepper. Slowly cook uncovered, stirring occassionaly, for about 35-40 minutes or until well caramelized.
On a small skillet, toast pine nuts over medium-low heat for about 5 minutes or until lightly golden.
In a large sauce pan, combine water, butter and salt. Bring to a boil, then remove from heat. In an even stream, pour in couscous and stir well. Cover and let stand for 5 minutes.
Transfer couscous to a mixing bowl. Stir in garlic oil to couscous. Then, add onions, pine nuts, dates, and cinnamon. Stir with a fork to fluff and blend. Top with crumbled goat cheese.
