Apple and Jicama Salad

2 medium apples, pared, cored and diced
1 medium jicama, pared, and diced
2 tablespoons fresh lemon juice
1/2 cup shredded coconut
1/2 cup peanuts, raw or roasted, shelled, skinless, unsalted
1/2 cup mayo, light is OK
2 tablespoons cilantro leaves, snipped, more if you like
1/4 teaspoon red chili flakes
In a bowl, combine diced apple and diced jicama together, sprinkle with 1 tablespoon of lemon juice and toss to coat.
Stir in the coconut and the peanuts, and toss to coat.
Stir in the mayo, the remaining lemon juice and toss to coat.
Add the cilantro and red chili flakes to combine.
Cover and chill until ready to serve.
Drain any excess liquid from salad before serving.
You can add more red chili flakes if so desired, but go easy as you do not want to over power the salad with spice.
This will serve about 6 people.
Do not worry too much if you have too much apple or jicama, the salad will come together anyway, and it is delicious with roast chicken.
