Split Pea Soup

Recipe Details:
2 tbsp olive oil
1 large carrot, peeled and diced
1 celery rib, diced
1 medium yellow onion, diced
2 cloves garlic, minced
8 cups water
1 ham hock
2 cups split green peas, rinsed
Salt and pepper
In a large soup pot, heat olive oil over medium heat. Add carrot, celery, onion and garlic and cook 8 minutes, until soft. Add water, ham hock and peas. Bring to a boil, reduce heat and simmer for 2 hours. Remove ham hock. Using a hand blender, pulse soup about 4-6 times until it's half creamy and half chunky. Season with salt and pepper. Pull meat off the bone of the ham hock. Chop meat and add to the soup. Heat to mesh flavors, then serve!!
