Valrhona Chocolate Fudge Sauce

Recipe Details:
1/2 cup sugar
1/4 cup Valrhona cocoa powder
1/4 tsp salt
1/2 cup water
1 cup heavy cream
1 cup light corn syrup
1/4 tsp white vinegar
4 oz Valrhona semi-sweet chocolate, coarsely chopped (and divided in half)
1/2 stick unsalted butter, room temp
1 tbsp vanilla
In a large saucepan, whisk together sugar, cocoa powder and salt. Mix in water. Bring to a simmer over medium heat. Remove from heat and whisk in cream, corn syrup, vinegar and 2 oz of the chocolate. Return to medium heat and bring to a boil, whisking often. Boil until syrup becomes thick, about 10 minutes. Remove from heat and whisk in remaining chocolate, butter and vanilla. This sauce can be refrigerated for up to 2 weeks.
