These complex, tart yet sweet onions are very quick and easy to make and very delicious and versatile as condiments on all sorts of dishes, from grilled sardines to pulled pork sandwiches.
2 medium red onions, sliced as thin as possible
1/2 cup white vinegar
1 cup water
3 tbsp sugar
4 tsp sea salt
2 garlic cloves
1 bay leaf
1 tsp herbes de provence (or 1 tsp of your preferred dried herbs such as thyme, rosemary, etc.)
a few whole allspice berries
a few whole peppercorns
Combine the vinegar, water, sugar, salt, garlic, bay leaf, herbs and spices in a medium saucepan.
Bring to a gentle simmer. Add the sliced onions and simmer for 3 minutes, stirring a few times. Allow to cool and refrigerate the onions in the cooking liquid in an airtight glass jar.
These onions can be used immediately or stored in the refrigerator for a few weeks.
Makes 2-3 cups.
