Black and White Cookies

Recipe Details:

For Cookies
1 1/4 cups flour
1/2 tsp baking soda
1/3 cup well-shaken buttermilk
1/2 tsp vanilla
1/2 cup sugar
1/3 cup unsalted butter, softened
1 large egg
1/2 tsp salt

Preheat oven to 350 degrees. In a medium bowl, whisk flour, baking soda and salt. In a small bowl, whisk buttermilk and vanilla. Using an electric mixer, beat together butter and sugar, until light and fluffy. Add egg and continue beating. Alternate, adding some flour mixture and then some buttermilk mixture until done. Make sure to begin and end with adding the flour mixture. Drop 1/4 cups of batter, 2 inches apart, on a buttered baking sheet. Bake for 15 to 17 min, until tops are puffed and golden. Transfer cookies to a sheet of waxed paper to cool 5 min. Turn cookies flat side up.

For Icings
1 1/2 cups confectioners sugar
1/4 tsp vanilla
1 tbsp light corn syrup
2 tsp fresh lemon juice
1 to 2 tbsp water
1/4 cup Dutch Processed Cocoa Powder

In a small bowl, mix together confectioners sugar, corn syrup, lemon juice, vanilla, and 1 tbsp water. Pour half of icing into another bowl and mix with cocoa. Add more water (1/2 tsp at a time) to the cocoa mixture so that it becomes the same consistency as the white icing. On flat side of cookie, spread white icing over half and chocolate icing over half.

Makes 6 cookies.
