Tofu Fries with Sweet & Spicy Dipping Sauces

Recipe Details:
For Tofu
1 block (14 oz) regular tofu, drained
1/3 cup cilantro, chopped
Oil for frying
Salt
Sweet Dipping Sauce - In a small bowl, mix together the following ingredients:
4 tsp sugar
1/2 tsp chili garlic sauce
2 tbsp rice wine vinegar
Spicy Dipping Sauce - In a small bowl, mix together the following ingredients:
1 tbsp Sriracha (hot chili sauce)
1 tbsp rice wine vinegar
Directions for Tofu
Fill a large, heavy saucepan with 2-3 inches of oil (make sure to leave plenty of room for the oil to raise when you're frying). Heat oil to 365 degrees. I use a fryer, which makes this much easier.
Drain tofu block of its liquid and cut into "fries", about 2" x 1/2". Dry the tofu fries thoroughly using paper towels. Salt tofu.
When oil is hot, dip tongs or a flat sieve in the oil. Add about 1/2 (or less if you're using a smaller saucepan) of the tofu to the pan using the tongs or sieve. Stir the tofu for this first 30 seconds to prevent clumping. Fry for about 4 minutes, until crisp and golden. You can also seperate them when you take them out from the oil. Drain on paper towels and salt immediately. Keep fried tofu warm in a 200 degree oven while you fry the rest. Transfer to a bowl and toss with with cilantro. Season again with salt if necessary. Repeat for remaining tofu fries. Transfer all tofu fries to a large bowl and toss (by shifting the bowl back and forth) with more salt and cilantro. Transfer to a serving dish. Serve with the dipping sauces.
