Goat Cheese and Sun-Dried Tomato Spread

Recipe Details:
8 oz goat cheese, room temp.
2 tbsp pine nuts
4 tbsp sundried tomatoes packed in oil and herbs, coarsely chopped
2 tbsp fresh basil, finely chopped
Salt and fresh pepper
Preheat oven to 400.
In a small skillet over low heat, toast pine nuts until lightly browned, about 3-5 minutes. Do not overcook - the pine nuts will continue to cook when you take them off the heat, so be careful.
In a medium bowl, combine goat cheese, pine nuts, tomatoes, basil, salt and pepper. Stir until well blended.
Transfer mixture to a small ramekin. Bake for 5 minutes, until cheese is bubbling. Serve with crackers.
Makes about 1 cup of spread.
Note: This can be served either warm or at room temperature (you can omit the baking part if you wish). I buy the sundried tomatoes from Trader Joes. This is a quick and easy appetizer for a large group.
