Nutty Peanut Brittle

Recipe Details:
2 cups sugar
1 cup light corn syrup
1 cup water
2 cups raw Spanish peanuts
1/2 tsp salt
1 tbsp butter
1 tsp baking soda
A candy thermometer is necessary for this recipe. Butter 2 large baking sheets. Clip your candy thermometer to a heavy 3-quart saucepan. At medium heat, combine sugar, syrup and water in the saucepan and stir until sugar dissolves. Cook over medium heat to softball stage (234 degrees). Stir in salt and nuts. Continue cooking over medium heat, stirring often. Cook to hard crack stage (305 degrees).Remove from heat. Carefully and quickly stir in the butter and baking soda. Pour onto the prepared baking sheets and spread evenly. Break brittle into pieces when cooled.
Note: Be careful, it's hot!!!!!!!
