Sweet & Spicy BBQ Beans

Recipe Details:

2 slices of bacon
3/4 cup yellow onion, chopped finely
2 tsp garlic minced
1 8-oz can tomato sauce
1 cup water
1/4 cup dark brown sugar, packed
2 tbsp molasses
2 tbsp apple cider vinegar
3/4 tsp dry mustard
1/4 tsp tabasco sauce
2 cans cannellini beans, drained and rinsed
Salt and pepper

In a large skillet over medium heat (you'll be cooking the beans in this too so make sure it's big enough), cook bacon until it begins to cook and release its grease, about 5 minutes. Add onion and saute about 5 minutes, until softened. Stir in garlic and cook another minute. Add tomato sauce, water, sugar, molasses, vinegar, mustard and tabasco and bring to a boil. Boil for 5 minutes, stirring occasionally, until sauce begins to thicken. Stir in beans and bring back up to a boil. Reduce heat slightly, cover and simmer for 8-10 minutes. Uncover and simmer another 8-10 minutes, until flavor is blended and sauce is thickened. Season with salt and pepper.

Serves 2-4

Note: I like the bean sauce really thickened so I usually end up cooking it and reducing it down a bit longer than this.
