Bbq'd Oysters with Sauteed Chard and Bacon

Recipe Details:
2 dozen fresh medium sized oysters, shucked, loosened with the shucking knife (but kept) in their shells, slightly drained of their juice (optional) and placed over ice (top flat part of the shell can be discarded)
6 slices of bacon, chopped into small bits
2 tbsp unsalted butter
1/2 cup white onion, chopped finely
3 garlic cloves, minced
1 bunch chard, cleaned and chopped into small pieces (I use scissors)
1/4tsp red pepper flakes
1 tbsp flour
1/4 cup plus 2 tbsp heavy cream
Salt and pepper
In a small skillet, fry up bacon bits over medium-low heat. Drain on a paper towel and set aside.
In a large skillet, melt butter over medium-low heat. Sautee onion for 4-5 minutes, until softened (but not browned). Add garlic and cook an additional 1-2 minutes. Add chopped chard and red pepper flakes and cook until the chard is wilted, about 5 minutes. Add flour and cook 1 minute, or until flour is well incorporated. Pour cream into mixture and cook until mixture is thickened.
Set oysters onto a warmed grill. Top each oyster with a spoonful of the chard mixture and sprinkle with bacon bits. Grill for about 4 minutes. Remove from grill and serve immediately.
