Smoked Trout Salad
1 cup whipping cream
4 tbsp prepared horseradish
2 tablespoons olive oil, plus extra for dressing the salad
2 1/2 tablespoons apple cider vinegar, plus extra for dressing the salad
2 teaspoons finely chopped fresh dill
1/8 teaspoon cayenne pepper
Freshly ground pepper
6 cups trimmed watercress sprigs (about 2 large bunches)
1/3 cup very thinly sliced red onion
1 Fuji apple, cored, 1/4-inch slices
9 ounces smoked trout, torn into coarse pieces
Whisk cream, horseradish, 2 tablespoons oil, 2 1/2 tablespoons vinegar, chopped dill, cayenne and pepper in small bowl to blend. Place watercress in large bowl. Add 1/3 cup cream dressing, a glug of oil and a glug of vinegar and toss to coat. Season to taste with salt and pepper.
To serve, mound watercress in center of each of 6 plates. Top with sliced onion. Fan apple slices on top. Then, sprinkle with trout. Lightly, spoon dressing over.
Note: Don't expect to use all the dressing - there is MORE THAN ENOUGH. It's perfect for this salad but I wouldn't save it for another salad...! This is a great recipe and looks impressive to serve - we buy the smoked trout in a big thing at Costco!
