Grilled Rice Balls

Recipe Details:

FOR RICE --

2 cups short-grain rice
2 cups water

Cook rice according to rice cooker directions. Fluff rice and let cool with lid open about 10 minutes.

FOR RICE BALLS --

Cooked short-grain rice
1/4 cup warm rendered pork fat
Salt

Heat a grill pan over high heat. Using a cylindrical rice mold (found at any Japanese grocery store) and wet hands, shape rice into cylinders (pack in more rice than you think for a nice tight cylinder). Brush each cylinder with pork fat and sprinkle with salt. Grill molded rice until it begins to color slightly, then rotate so each side gets grilled. Serve warm.
