makes about 1 cup of dressing
1/2 of a small onion
1/4 cup vegetable oil
2 tablespoons rice wine vinegar
2 tablespoons water
1 tablespoon peeled and roughly chopped fresh ginger
1 tablespoon roughly chopped celery
1 tablespoon soy sauce
1 1/2 teaspoons tomato paste
1 1/2 teaspoons sugar
1 teaspoon lemon juice
salt and freshly ground black pepper
Combine all ingredients in a mini food processor and process until almost smooth. Serve with a peppery green, like mizuna.
