Raspberry Oatmeal Bars
1/2 cup packed light brown sugar
1 cup flour
1 cup oats
1/4 tsp baking soda
1/8 tsp salt
1/2 cup butter, room temp
1/2 - 3/4 cup raspberry jam, depending on your liking
preheat oven 350 degrees. Set oven rack to middle position. Line a 6x10" pan with tin foil. Spray all sides and bottom of the tin foil generously with PAM.
In a bowl, mix brown sugar, flour, oats, baking soda and salt. Add butter and combine with your hands to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the pan. Next, spread the jam in an even layer. Then, sprinkle the remaining cup of oatmeal mixture evenly on top and lightly press into the jam.
Bake for 30-35 minutes. Let cool completely, carefully remove the tin foil and cut into bars.
