Graham Cracker Cookies with Pecans
Set oven to 400 degrees.
Place graham cracker squares on a cookie sheet (fill entire sheet with crackers) lined with foil. Have graham crackers touching, no gaps.
2 sticks of butter
1 cup of brown sugar, packed
2 cups of chopped pecans or almonds (pecans are my favorite)
Melt butter and sugar in a saucepan. Bring to a boil, stirring constantly. Boil for one minute.
Pour glaze over graham crackers and spread evenly with a spatula. Sprinkle with nuts.
Bake until bubbles cover glaze, this takes about 6 minutes. Do not over bake as this will burn the sugar!
Cool in pan for 4 minutes. Remove each graham cracker with a spatula to a cooling rack. Cool completely – about 20 minutes.
Cookies can be frozen – if they last that long!
