1/2 cup fresh basil leaves, torn into large pieces
about 2 cups cooked garbanzo beans
1 lb fresh salami, cut into cubes
1 ld mortadella, cut into cubes
1 lb provolone, cut into cubes
1 red bell pepper, ribs and seeds removed, chopped
2 tomatoes, chopped
1 pint of Scicilian olives, pits removed
1/3 cup peppercini, chopped
1 red onion, chopped
2 ribs celery, chopped
Miss all these ingredient together. Mix in viniagrette (see recipe below).
for viniagrette --
1/4 cup red wine vinegar
1 tsp dried italian herbs
salt and fresh pepper
3/4 cup extra virgin olive oil
Place vinegar, herbs, salt and pepper in a bowl. Whisk in the olive oil to emulsify.
