1 cup flour
3/4 tsp salt
4 tbsp cold unsalted butter, cut into 4 pieces
8 ounces grated sharp cheddar cheese
3 tbsp water
Pulse the flour, and salt in food processor. Add butter and pulse until the mixture resembles corn meal. Add cheese a handful at a time and continue to pulse. Add water until dough forms a ball.
Place in fridge for 30 minutes.
Place a silpat (or parchment paper) on your baking sheets. Put dough on baking sheet and roll out until it's 1/4" thick. Cut into pieces using a small 1-inch cookie cutter. Bake at 350 degrees for approx 12 minutes. Makes 3-4 cups.
