Congee with Pork
3/4 cup long grain rice
9 cups water
1 1/2 teaspoons salt
1/2 pound pork cutlets, chopped into small strips
4oz shitake mushrooms, stems discarded and thinly sliced
1/2 cup chopped cilantro
1/2 cup chopped green onions (white and green part)
In a large pot, bring the water and rice to a boil. When the rice is boiling, turn the heat down to medium low. Partially cover and cook on medium low, stirring occasionally, until the rice has the thick, creamy texture of porridge, about 1 1/2 hours. Add the salt, pork and mushrooms and cook an additional 5 minutes, until the pork pieces are cooked through. Distribute into bowls and drizzle with soy sauce and top with cilantro and green onions.
