Recipe Details:
1 Bunch of Fresh Cilantro (rinse, drain and trim approx. 1 inch from the bottom of the stems.)
4-6 Large Garlic Cloves
6-8 Medium Jalapenos (seeded and veined* (for spicier sauce, add in some seeds)
1/4 cup of white wine vinegar
1/2 tsp salt
2 cups of Mayo
Puree top five ingredients in a blender/food processor and put into a mixing bowl. Add the mayo using a wire whisk and fold in until completely blended. Makes approximately 1 QT. Place in refrigerator for a few hours, preferably overnight to allow flavors to meld.
I love this with chips as a creamy salsa, as a dressing for a salad, on grilled fajitas/pork tenderloin, on grilled fish/chicken. Completely versatile and delicious. Great on migas or breakfast tacos as well.
