Holiday Frosted Cut-Out Cookies

Recipe Details:

For Cookies: Makes about 30 cookies, depending on the size.
12 tbsp unsalted butter, room temperature
12 tbsp sugar
2 large eggs
1 tsp vanilla
2 2/3 cups cake flour
1 tsp baking powder
1 tsp salt

In a kitchenaide mixer, cream butter and sugar. Beat in egg and vanilla. In another bowl, mix together flour, baking powder and salt. Add dry ingredients to wet ingredients and mix until blended. On a floured work surface, form dough into a flat disc. Wrap in plastic wrap and place in refrigerator for at least 2 hours. To speed up the process, place in freezer.

Preheat oven to 350. Move racks to middle position. Sprinkle work surface with flour. Place dough on floured work surface, then add a bit more flour to the top of the dough and your roller. Roll out to 1/4-inch thick. Cut into shapes using cookie cutters. Place cookie shapes on 2 baking sheets lined with parchment or silpat. Bake for 8-10 minutes, until the edges are just golden brown.

For Frosting:
1/4 cup butter, room temperature
2 cups powdered sugar, sifted
1 tsp vanilla
4 tbsp heavy cream
Food coloring

Using an electric mixer, beat butter, sugar, vanilla and cream until smooth. Mix in drops of desired colors of food coloring. Frost cookies and decorate with sprinkles.
