Farmers Market Roasted Potatoes
2 lb mixed farmers market potatoes (like purple, red etc), cut into 1-inch pieces
1 head garlic, separated into cloves with paper left on
about 1/2 tsp of herbs de provence
about 3 tbsp extra virgin olive oil
salt and fresh pepper
preheat oven to 425. bring a medium pot of salted water to a boil and blanch potatoes for 2 minutes. drain and place on a rimmed baking sheet. toss potatoes with garlic, herbs, oil, salt and pepper. spread evenly out on the baking sheet. bake for 35 minutes, until golden brown, tossing once during the cook time.
