King Ranch Chicken
4-6 pieces chicken (breasts or thighs)
salt and pepper to taste
green onions chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 package corn tortillas, torn up
1 can Rotel tomatoes and juice
1 pound cheddar cheese, grated
Cook chicken pieces with salt, pepper, 1 onion, & bay leaf. Reserve broth. Cut up chicken into bite-sized pieces. In casserole, alternate layers of chicken, cheese, tortillas, soups, tomatoes, & chopped onions, ending with a topping of cheese. Use broth for more liquid, if necessary.
Bake at 350 for 1 hour.
