Chicken Fried Rice
2 tbsp vegetable oil
3 tbsp green onions, finely chopped
2 cups cooked long grain white rice, cold
1 large egg
1 cup cooked chopped chicken
about 1-2 tbsp soy sauce
Heat oil over high heat in a large nonstick skillet or wok. Add green onions and sautee for 2 minutes. Add cold cooked rice and cook for about 3 minutes, stirring with a spatula to coat the rice with oil. Crack the egg in the middle of the rice and toss around with a spatula. Add chicken and continue to toss. Mix in soy sauce and season with salt.
Serves 2 large portions, 4 small
