Puff Pastry S'Mores

*** Here are two different recipes for Puff Pastry S'Mores. The first recipe is like a package of s'mores and the second recipe looks like a traditional s'more, using puff pastry in place of the graham cracker.

Note: These recipes are really great with the Vosges Red Fire Bar (the Mexican Chipotle Chili chocolate bar). You can drizzle some chocolate sauce over the puff pastry s'mores for presentation if you want, but it is chocolately enough already so it's not really necessary!

RECIPE 1 - "Package of S'mores"

1 package (2 sheets) of Pepperidge Farm puff pastry sheets, thawed
16 large marshmallows, halved
1 3.5oz Valrhona Semi-sweet chocolate bar (or other high-quality chocolate), broken into 8 squares/pieces

Preheat oven to 400 degrees and place rack at middle level.

Spread one of the puff pastry sheets on a large cutting board and cut into 4 equal squares. Place 2 marshmallow halves in the middle of each pastry square. Top with 1 piece of chocolate, then with 2 more marshmallow halves. For each square, take two opposite corners, bring to the center and seal by pressing the pieces together. Repeat for the remaining corners. Make sure to seal the pieces and corners well, or the marshmallow will leak from the pastry package. Repeat process for the remaining pastry sheet and ingredients.

Place pastry s'mores on a baking sheet and bake for 15 minutes. Transfer to individual plates and serve immediately.

Serves 8

RECIPE 2 - "Traditional S'mores"

1 sheet of Pepperidge Farm puff pastry, thawed
8 large marshmallows, halved
1 3.5oz Valrhona Semi-sweet chocolate bar (or other high-quality chocolate), broken into 8 squares/pieces

Preheat oven to 400 degrees and place rack at middle level.

Spread the puff pastry sheets on a large cutting board and cut into 4 equal squares. Cut each small square into 4 more equal squares, making a total of 16 squares. Place squares on a baking sheet and bake for about 10-12 minutes, until puffed and golden. Remove from oven and top 8 of the squares with 2 marshmallow halves, then a chocolate square, carefully pressing down the marshmallow on the puff pastry so that it sits evenly. Top each with a puff pastry square, so that it looks like a sandwich. Bake in the oven 1-2 minutes, until the marshmallow and chocolate are just beginning to melt.

Transfer to plates and serve immediately.
