1 cup fine bulgur
1 1/2 cups boiling-hot water
2 tablespoons olive oil
2 bunches fresh flat-leaf parsley, finely chopped (use food processor)
5 green onions, finely chopped
1/4 cup finely chopped fresh mint
3/4 cup tomatoes, cut into 1/4-inch pieces
1/2 seedless English cucumber, peeled, cored, and cut into 1/4-inch pieces
6 tablespoons fresh lemon juice
3/4 teaspoon salt
Place Bulgur in a bowl and pour boiling water over, then cover bowl tightly with plastic wrap and let stand 30 minutes. Drain in a sieve, pressing on bulgur to remove any excess liquid.
Transfer bulgur to a bowl and toss with remaining ingredients, until combined well.
