Simple Garlic Couscous
1 cup chicken stock
2 medium garlic cloves, minced
2 tbsp butter
1/2 tsp salt
1 cup couscous
1/4 cup chopped raw almonds, toasted
about 1 tbsp olive oil
Salt and fresh pepper to taste
In a medium sauce pan, combine chicken stock, garlic, butter and salt. Bring to a boil, then turn off heat. In an even stream, pour in couscous and stir well. Cover and let stand for 5 minutes.
Transfer couscous to a mixing bowl. Fluff with a fork. Add almonds and olive oil. Toss gently until well combined.
