Chinese Spiced Peanuts

Lots and lots of peanuts!

Recipe Details:

Note: This recipe was given to me by its creator, Debbie Chew, an expert on Chinese cooking and eating. They are great as a snack! She says that they can last for a month or two in an airtight container. She also recommends using a baking pan with high rims as it makes stirring the peanuts easier.

Ingredients
Raw Peanuts with skins on (ideally from a Chinese grocery store) – 4 pounds

Chinese 5 spice – 4 tsp

Salt – 3 tsp

Sugar – 3 tsp

Water – 1/2 cup

Habanero Pepper Sauce (Louisiana Gem brand, sold at Whole Foods) - optional

Directions
Preheat oven to 350. Wash and drain peanuts. Transfer to a large baking pan with high rims. Mix 5 spice, salt, sugar, water and habanero sauce together until well blended. Pour over peanuts and stir to coat. Bake for one hour and stirring every 15-20 minutes. Reduce heat to 225 and bake another 2 hrs. The peanuts will become dry and crisp. You can stir the peanuts every 1/2 or every 45 min to prevent burning.

Makes LOTS of peanuts!
