Mini Chocolate Chip Cookies

Recipe Details:

1 1/2 cup flour
3/4 tsp baking soda
1/4 tsp salt
8 tbsp unsalted butter, melted
1/3 cup packed light brown sugar
1/2 cup sugar
2 tbsp light corn syrup
1 egg yolk
2 tbsp milk
1 tbsp vanilla
1 cup mini chocolate chips

Move oven rack to the middle position in the oven. Preheat oven to 375 degrees. Line baking sheets with parchment paper or silpat.

In a bowl, combine flour, salt and baking soda. Set aside.

In a large bowl, mix butter, both sugars and corn syrup with an electric mixer (or KitchenAide). Add egg yolk, milk and vanilla and continue mixing until smooth. Add flour mixture and mix until just blended. Stir in the chocolate chips with a wooden spoon.

For each cookie, spoon 1 teaspoonful of batter onto the baking sheet, 1 inch apart. Bake for 8-10 minutes on the middle rack until cookies are brown and flat. Rotate baking sheet halfway through cook time to ensure even baking. Remove cookies from the oven. Let cool a few minutes, then transfer to a wire rack to cool.

Makes approx. 60 mini-cookies.
