Roasted Pumpkin Seeds
1 cup pumpkin seeds
1 tbsp melted butter
Preheat oven to 300 degrees. Scrub pumpkin seeds with water, removing any stringy membranes. Drain and dry thoroughly on paper towels. Toss seeds with melted butter and sprinkle generously with salt. Lay seeds on a baking sheet in a thin layer. Sprinkle with more salt, if necessary. Bake for 23-25 minutes, until lightly browned (don't overbrown them or they'll taste burnt). Remove them from the oven half-way through the cook time and toss them with a spatula.
Other flavors to sprinkle on the seeds:
Garlic Salt (My favorite)
Lawry's Seasoning Salt
Note: Pumpkin seeds are great sprinkled on a salad!
