Sauteed Spinach with Garlic and Pine Nuts
2-3 tablespoons pine nuts, toasted
2 tablespoons olive oil
2 tablespoon butter
6 cloves garlic, finely chopped
1/2 tsp red pepper flakes
about 2 bunches fresh spinach (or 3 bags), washed and dried
Salt and freshly ground black pepper to taste
Freshly grated Parmesan cheese shavings
In a large skillet over medium heat, combine oil and butter. Saute garlic with red pepper flakes for about 30 seconds or until lightly golden (be careful not to burn the garlic, or it will taste bitter). Add spinach and saute until just wilted, about 2 to 3 minutes. Remove from heat; add pine nuts and season with salt and pepper. Sprinkle with Parmesan shavings. Serve immediately.
