Gourmet Hot Chocolate
1 vanilla bean, split lengthwise
1/2 cup sugar
1/2 cup Dutch-Processed cocoa powder
1/2 cup water
pinch of salt
3 cups whole milk
1 1/2 cups half and half
1 tsp vanilla extract
Using a paring knife, scrape seeds from vanilla bean and place into a mini-food processor. Set aside bean. Add sugar to processor and blend. Pour vanilla sugar into medium pan and add cocoa powder, water and salt. Whisk until smooth. Over medium heat, whisk until just beginning to bubble. Add whole milk, half and half and reserved vanilla bean. Bring mixture to a simmer, whisking frequently. Remove from heat, remove vanilla bean and whisk in vanilla extract. Ladle into 6 mugs and top with small marshmallows.
Note: This is the most delicious and decadent hot chocolate you'll ever drink! When you are cooking the milk, watch it carefully so it doesn't boil over!
