1 cup yellow or white cornmeal
1/2 cup all-purpose flour
1 tsp baking powder
1 tsp salt
1 tsp sugar
1/4 tsp cayenne pepper, or more to taste
1/2 cup green onion, finely chopped
1 can cream style corn (16 oz)
1 tbsp pickled jalapenos, finely chopped
2 tbsp bacon grease, melted
1 tbsp buttermilk, or more as needed
Mix dry ingredients. Add onion, corn, bacon grease and buttermilk. Mix well. If more liquid is needed to make thick, yet moist consistency, add a little more buttermilk. Drop tablespoons into deep hot fat, about 370°. Fry until golden brown, about 3 1/2 minutes each, turning occasionally.
Makes about 16-24 hush puppies.
