Pancetta-Wrapped Dates

Recipe Details:

Ingredients
16 blanched almonds
16 dates, pitted
16 slices of pancetta (1 package)

Directions
On a baking sheet, toast almonds at 350 about 10 minutes. Cool.

Stuff each date with an almond. Depending on how large the slices of pancetta are, you may want to cut the pancetta slices in half crosswise with scissors - if you're using the pre-packaged kind, this is not necessary. Wrap pancetta piece around date and secure with a toothpick (by piercing through the pancetta and date). Bake on a baking sheet about 20-30 minutes, or until pancetta is somewhat crisp and dates are caramelized. Cool briefly and serve.

Serves 4-5

Note: An easy (to cook and eat) and tasty recipe. Almonds can be purchased at Trader Joes. I buy the pre-sliced pancetta in the package.
